Gas Ovens
Gas ovens are used mostly in every kitchen because they are cheap to operate.
If you go into the kitchen of any quality restaurant, you will find gas ovens and stoves. The reason gas appliances are so popular among the professionals is due to the accurate heat distribution. You know what the temperature is, and if you turn it down, the heat immediately goes down, whereas an electric stove, takes a while for the change to take place. In order for an electric stove to have even heat, the burner must be perfectly flat, and this can be difficult to find. With gas stoves, the burners do not have to be perfectly flat because the heat is coming from the flame, not the burner.
Gas ovens and stoves actually create less heat, keeping your kitchen cooler in those hot summer months and using less energy. Gas also produces a moist heat preventing casseroles and meats from drying out.
There is a point in life where you will need to purchase an oven, and the decision you will have to make is "gas or electric'. Technology has come a long way since your parents purchased their first appliance, the limitations that were once a concern, are no longer a problem. One of the complaints of gas ovens was poor ability to broil, that was when the broiler was under the oven. That is no longer a problem, the latest gas ovens have dedicated broilers with even heat set up in the top of the oven.
Gas ovens provide a moist heat making your baked goods taste even better. Electric heat is a dry heat and will cause your food to dry out faster making the shelf life much shorter. If you are a restaurant owner, you will have less wasted food, and less labor to keep new batches going in the oven.
